Avenue Q took Broadway by storm in 2003. The quirky mix of puppets and real humans, the risqué lyrics, the catchy tunes, and the fact that it is an all-round great musical means that Avenue Q continues to delight audiences (albeit off-Broadway now) to this day. Hilarious songs like Everyone’s A Little Bit Racist, My Girlfriend Who Lives In Canada, The Internet Is For Porn and Schadenfreude are balanced by beautiful ballads like There’s A Fine Fine Line and Fantasies Come True. To celebrate my love of this musical I focused on the letter ‘Q’ – and as I didn’t have any quail to hand, here is a super delicious quinoa side dish for you to enjoy.

Cook the quinoa according to the pack instructions. You can cook it in advance if you like, let cool, then store (covered) in the fridge until required. In a large skillet, sauté chopped onion and garlic in olive oil until they have softened.
Add chopped sun-dried tomatoes and baby spinach, and continue to cook until the spinach has wilted. Add in the cooked quinoa, mix well, and add salt and pepper to season.
- 1 cup quinoa
- 1 tbs olive oil
- ¼ cup chopped onion
- 1 tsp garlic paste
- ¼ cup sun-dried tomatoes, chopped
- 5 oz fresh baby spinach
- salt and black pepper
- Cook the quinoa according to the pack instructions.
- Add olive oil to a large saute pan and add the onion and garlic. Cook until the onion has softened.
- Add the tomatoes and spinach, and continue to cook until the spinach has wilted.
- Add the cooked quinoa, and mix well. Add salt and pepper to taste.
