Behold the Lord Thigh Executioner - a Japanese chicken thigh recipe inspired by the musical Hot Mikado!

Given that I claimed back in December 2016 (why yes, this blog HAS been running that long) that Hot Mikado was in my top five musicals of all time, it’s rather embarrassing to realize that I’ve only been inspired by the show once to make a recipe (Yes! You guessed right! It *was* Swing A Merry Mackerel!)

So I’m putting that right by adding to the collection, with my Japanese chicken thighs recipe inspired by the song Behold The Lord High Executioner.

What is perhaps less Japanese about it, I should confess, is the cooking method. But quite frankly, I was getting tired of all the sous-vide this, and steam-oven that. So this recipe is cooked in the INSTANT POT! Ha! (Ed: Yawn… you’ve used that before to make a soup) I did? Oh.

Anyway. An Instant Pot is a very quick way to cook the thighs, and is very convenient due to its built in sauté function. So. Here’s how to make it.

Defer, defer
To the Lord Thigh Executioner!

Spray the instant pot base with non-stick spray, and set it to the Sauté function. Place skin-on, bone-in chicken thighs skin-side down into the pot, and cook for 5 minutes or until golden brown, moving them around occasionally.

Meanwhile, make the sauce by combining soy sauce, rice vinegar, ketchup, and wasabi paste together in a bowl.

Flip the chicken thighs over, and turn off the Sauté function. Add the sauce, seal the lid, and set the Instant Pot on Pressure Cook High for 20 minutes.

After the cooking time is over, release the steam safely, and once the pressure valve button drops, open the lid.

Serve, garnished with chopped green onions, cilantro, and sesame seeds. Oh, and red chopsticks. Which, are, of course, the ideal utensil for eating chicken thighs.

Ingredients

  • non-stick spray
  • 4 skin-on, bone-in chicken thighs
  • ¼ cup soy sauce
  • 1 tbs rice vinegar
  • 1 tbs ketchup
  • 1 tsp wasabi paste
  • Cilantro, chopped green onions, and sesame seeds, to garnish
  • Flip the chicken thighs over, and turn off the Sauté function. Add the sauce, seal the lid, and set the Instant Pot on Pressure Cook High for 20 minutes. 
  • After the cooking time is over, release the steam safely, and once the pressure valve button drops, open the lid. 
  • Serve, garnished with chopped green onions, cilantro, and sesame seeds.
