Have Yourself A Merry Little Christmas is from the movie musical Meet Me In St Louis. It was released in 1944 and stars Judy Garland and Margaret O’Brien. As well as Have Yourself a Merry Little Christmas, the musical also features The Trolley Song and The Boy Next Door. Although not one of the most popular stage musicals, it IS a Christmas classic and we absolutely had to include it!

The most popular recording of the song is by Frank Sinatra – who I think has recorded all the Christmas classics! So for our festive twist on this song, we bring you a “berry little Christmas”, which is a delicious recipe for cranberry and raspberry mousse.

To start the mousse you will need to make a berry syrup. Add fresh raspberries, water, sugar and cranberry sauce to a saucepan and heat over a medium heat. Cook until the sugar has dissolved and the raspberries have broken down – about 10 minutes. You could of course use fresh cranberries instead of the sauce, but because my grocery store was out of fresh ones, you’re getting this cranberry sauce version! Set aside the syrup and allow it to cool.

Blend the berries until smooth (I use an attachment on my stick blender), then push the mixture through a sieve to remove the seeds. In a small bowl, mix an envelope of unflavored powdered gelatin and cold water together. Add boiling water and stir well. Add it into the berry syrup and stir again.
In a stand mixer, whisk the cream until stiff peaks form. Carefully fold in the berry mixture then spoon into serving glasses or bowls. Keep in the fridge until required.

Ingredients

    for the syrup
  • 6oz fresh raspberries
  • 2 tbs cold water
  • 2 tbs sugar
  • ¼ cup cranberry sauce
  • for the mousse
  • 1 envelope unflavored powdered gelatin (1 envelope = 0.25 oz/7.4g)
  • 2 tbs cold water
  • ¼ cup boiling water
  • 1 cup heavy cream

Instructions

  1. To make the berry syrup, add the four syrup ingredients to a saucepan and heat over a medium heat until the sugar has dissolved and the raspberries have broken down. Set aside and allow to cool.
  2. Blend the berries until smooth, then push the mixture through a sieve to remove the seeds.
  3. In a small bowl, mix the gelatin and cold water together. Add the boiling water, stir well, and add it to the berry syrup.
  4. In a stand mixer, whisk the cream until stiff peaks form. Carefully fold in the berry mixture then spoon into serving glasses or bowls.
  5. Keep in the fridge until required.
