It’s Brigadoon! It’s bloody Brigadoon! And about time we featured a song from it here on the blog, said no person ever.
Almost Like Being In Love was first performed in the 1947 Brigadoon, later made famous by Gene Kelly in the 1954 movie. Vacationing Americans Tommy and Jeff find themselves lost in the Scottish Highlands. And it just so happened that on that very day, the village of Brigadoon is visible to outsiders – an occurrence that happens only one day in every one hundred years.
But then things get even trickier. They are told that if any person leaves the village, the spell will be broken and Brigadoon will disappear forever. But a stranger can only stay if they fall in love. They went with the love option.

So put a smile on your own face and enjoy this healthy cauliflower rice side dish. With beans, of course. You can buy pre-riced cauliflower either in the fresh or frozen sections of many supermarkets, but if you want to make your own (which is cheaper), it’s very easy.
Cut a head of cauliflower into small chunks. Add half to a blender, and three-quarters cover it with water. Pulse a few times until “rice” has formed. Transfer the cauliflower to a sieve, and drain out the water. Repeat with the rest of the cauliflower.
One large head of cauliflower makes enough rice for about eight side dish servings – but it freezes really well!
Sauté the riced cauliflower in some olive oil. Add some cut green beans, and chopped sun-dried tomatoes. Season with salt and pepper. Continue cooking until the vegetables are done to your liking. Serve with grilled meat or fish. Tartan is optional, but highly recommended…
