Chicory Has Its Eyes On You - an appetizer recipe inspired by the musical Hamilton!

In that little-known cult fringe hip-hop musical, Hamilton, George Washington is portrayed as a surrogate father-figure to that “bastard, son of a whore and a Scotsman”, Alexander Hamilton. Having taken him under his wing, and, believing him to be destined for greatness, he advises the impetuous young Hamilton to learn from Washington’s own youthful mistakes as History Has Its Eyes On You and he will be judged on his actions. This song also contains the first rendition of the Who Lives, Who Dies, Who Tells Your Story motif, which forms the basis of the Act II finale.

History Has Its Eyes On You is set at the time of the Battle of Yorktown, in an area that (I imagine) is now famed for its chicory farms. “What is chicory?” I hear you cry. Well, I am so glad you asked me that. Chicory, also known as endive, is a bitter salad leaf. The bitter flavour does make it rather an acquired taste but the boat-shaped sturdy leaves make it ideal for filling and serving as an appetiser. Something with a slightly sweeter note works well with chicory, so I have prepared two different fillings: smoked salmon and sweet chilli, and blue cheese and pear. I’m not going to give you quantities as this is exactly the kind of recipe you should just play around with until you get something you like the taste of (You forgot to write down the quantities, you mean – Ed.) These are fairly sizable (2 per person is probably enough) but at least can be eaten one-handed meaning you don’t have to put your glass of wine down!

Flake a hot-smoked salmon fillet and, reserving some for garnish, mix most of this with some cream cheese, a squeeze of lemon and a little sweet chilli sauce. Fill the chicory leaves with the mix and garnish with the extra salmon flakes, some more sweet chilli sauce and chopped coriander/cilantro.

Mix some softened blue cheese (gorgonzola is a good option) and a little cream cheese and chopped pear and fill the chicory leaves. Garnish with a sliver of pear, some crumbles of cheese and some chopped nuts or seeds – I used sunflower seeds but chopped hazelnuts would be great here.

Ingredients

  • hot-smoked salmon fillet

  • chopped pear

Instructions
