Chorizo Little Thing Cauli-ed Love - a tasty recipe inspired by the Queen musical We Will Rock You!

So I made this thing… called… well, that was the problem. What do we call this thing that I made with cauliflower and chorizo? A Choruzio Line? The Cauli-Flowers That Bloom In The Spring? There was much head-scratching and much silliness – West Side Chory-zo anyone? (Actually that one is growing on me…)

Then, inspiration (of sorts) struck and Queen’s Crazy Little Thing Called Love it was, as featured in We Will Rock You (which you can read a bit more about in The Show Must Goan (Fish Curry)).   Queen first recorded the song in 1979 – did you know that it’s Freddie Mercury playing the famous guitar riff intro? Many cover versions have followed including Michael Bublé, McFly, Diana Ross, Maroon 5 and, erm, Alvin And The Chipmunks.  I would tell you about the plot at this point of the show but plot was never We Will Rock You‘s strong point, so let’s just enjoy the song!

Heat the oven (200C fan). Break the cauliflower into florets, slice the onion and chop the chorizo into bite-size pieces. Add these to a suitable oven-proof dish along with a little olive oil and some seasoning and give everything a good mix so that the cauliflower gets coated in oil. Bake in the oven for 10-15 minutes. Stir well and scatter over the pine-nuts before returning to the oven for another 10-15 minutes.

When cooked, allow to cool for a few minutes before drizzling over the lemon juice and adding some teaspoonfuls of ricotta (torn buffalo mozzarella would be a good alternative). Finish with a handful of parsley, take a long ride on my motorbike and it’s ready, Freddie!

Serves one hungry Angus as a main meal, or two normal people as a side dish.

Ingredients

  • 500g cauliflower 
  • 190g cooking chorizo
  • 30g pine nuts
  • 1 lemon, juiced
  • 100g ricotta
  • Salt and pepper
  • Parsley

Instructions

  1. Preheat the oven (200C fan).
  2. Break the cauliflower into florets, slice the onion and chop the chorizo into bite-size pieces. Add these to a suitable oven-proof dish along with a little olive oil and some seasoning and give everything a good mix so that the cauliflower gets coated in oil.
