The song More I Cannot Wish You appears in Act II, and is sung by Arvide to his granddaughter Sarah, after she doubts Sky’s suitability:

But more I currant wish you
Than to wish you find your love
Your own true muffin this day…

So if you wish to show true love for someone muffin-style (why does that sound so odd?!?), then try these redcurrant muffins! As well as being super tasty – they’re also gluten free. When cooked, there are pops of flavor from the burst redcurrants – you’re going to love them!

Mix together almond flour, sugar, and baking powder. Add in melted butter, milk, and beaten eggs. Stir well until fully combined, then fold in the redcurrants.

Divide the mixture between 6 muffin cups (lined with paper or silicone liners), then bake in a preheated oven for 20-35 minutes or until cooked through.

Ingredients

  • 1½ cups almond flour
  • ¼ cup sugar
  • 1 tsp baking powder
  • 2 tbs melted butter
  • ¼ cup milk
  • 2 eggs, beaten
  • ½ cup redcurrants

Instructions

  1. Preheat the oven to 350F (177C).
  2. Mix together the almond flour, sugar, and baking powder.
  3. Add in the melted butter, milk, and beaten eggs. Stir well until fully combined, then fold in the redcurrants. 
  4. Divide the mixture between 6 muffin cups (lined with paper or silicone liners), then bake for 20-35 minutes or until cooked through.
