For our second recipe inspired by Legally Blonde The Musical (don’t tell me you’ve forgotten Steak it Like a Ham already?!?!?), we bring you a roasted cod dish. Technically nothing to do with the song Omigod You Guys or the musical, BUT it *is* photographed on a pink background, so it’s totally legit.

The song appears at the start of the musical where Elle’s sorority sisters are excitedly getting her ready for a big night out with her boyfriend. Elle is also pretty excited too:

If you haven’t seen it I won’t write any spoilers here (cough cough he doesn’t propose cough cough). So let’s move swiftly on to this super easy recipe.

Spray a baking dish with non-stick spray, then place the cod fillets in the baking dish. Melt some butter, and stir in some garlic paste. Pour it over the fish, and season it generously with salt and black pepper.

Chop up the herbs – the combination is up to you and might depend on what you have on hand, but I used basil, parsley, chives, and tarragon. Sprinkle the herbs over the fish, add the cherry tomatoes, cover the dish with foil, and roast in a pre-heated oven for 20 minutes, removing the foil after 10 minutes.

Ingredients

  • 2 cod fillets
  • 2 tbs butter
  • 1 tsp garlic paste
  • salt and pepper
  • ¼ cup chopped herbs (eg basil, parsley, chives, and tarragon)
  • 10 cherry tomatoes

Instructions

  1. Preheat the oven to 375F.
  2. Spray a baking dish with non-stick spray, then place the cod fillets in the baking dish. Melt the butter, and mix it with the garlic paste. Pour it over the fish, and season it generously with salt and black pepper.
  3. Chop up the herbs - the combination is up to you and might depend on what you have on hand, but I used basil, parsley, chives, and tarragon. Sprinkle the herbs over the fish, together with the tomatoes, then cover the dish with foil, and roast for 20 minutes, removing the foil after 10 minutes.
