But did you know what the song Super Trouper is actually all about? It’s a kind of spotlight (a fact that I had to convince my esteemed and allegedly learned co-editors was true)! Hence the lyrics:

Super Trouper beams are gonna blind me
But I won’t feel blue
Like I always do
‘Cause somewhere in the crowd there’s you


Tonight the
Super Trouper lights are gonna find me
Shining like the sun

OK so they might also be about a person and the spotlight is clever analogy – but hey – at least it explains my choice of photo props!

This broccoli and cheese soup was actually made in one of my newest kitchen gadgets – an Instant Pot. If you haven’t heard of it, it’s like a modern pressure cooker but it also has a slow cooker function, sauté function – and more! So with this recipe, you just jump everything in, set it going, walk away – and come back to find lunch is all ready for you!

If you don’t have an Instant Pot – then I’m sure that if you dump all the ingredients into a saucepan and cook it there – that would work well too!

Souper Trouper

Souper Trouper
Cook Time 20 minutes
Total Time 20 minutes


  • 12 oz fresh broccoli florets
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic paste or minced garlic
  • salt and black pepper


  1. Add everything apart from the salt and pepper to the Instant Pot. Stir well, then seal the lid.
  2. Select the "Soup" button and set the timer for 20 minutes.
  3. After the cooking time has completed, release the pressure and carefully stir the soup.
  4. Taste for seasoning and add salt and black pepper as necessary.
