Summer Pudding is a classic British dessert made from soaking bread in fruit – usually a mix of berries and currants.
Wella, wella, wella, wella, uh!
This recipe has been adapted from James Martin’s Clotted Cream Summer Pudding, and was made by Keith’s wife Gina! The only changes were that she added some fresh fruit in the pudding as well as frozen, and made a bit more of the puree (as she remembered from making it previously that it needed a bit more). Oh, and we didn’t find any redcurrants from the local store, so there weren’t any in this version!
