Hairspray is a high energy musical set in the 60s with great dance and rhythm and blues numbers.  The show has had immense success, not just in the US but globally, and a follow-up movie and an upcoming live broadcast of the show on NBC is sure to bring the show to new audiences.

It follows Tracey Turnblad, a plump girl enjoying high school life, who enters and wins a competition to be on The Corney Collins show.  Through Tracey’s eyes we see the social injustices of the time, including the segregation that remains within The Corney Collins Show.  She makes it her mission to integrate the show.  Through organising a march against the station, being arrested, broken out of prison by her dreamy heartthrob Link Larkin, everything turns out great in the end for Tracey and her band of friends, and there is a great upbeat finale number – You can’t stop the beat!

What’s better than roasted beets? Why, roasted beets with bacon and blue cheese, of course! The hard work with this recipe is preparing the beets – once that is done it is super easy!

Peel the beets (I have used a mixture of candy-striped and regular beets in the photos here, but just one kind works fine too!). Cut in half then cut into slices.

Place them in a baking dish. Add olive oil, salt and pepper and stir it all around so the beets are evenly coated. Roast for 30-40 minutes or until they are tender. Under-cooked beets are NOT yummy!

Add chopped cooked bacon to the beets, and stir to mix. To serve, sprinkle over blue cheese crumbles and enjoy! Oh and if you have any leftovers these beets are really good in a salad!

Ingredients

  • 4-5 medium beets
  • 1 tbs olive oil
  • salt and black pepper
  • 4 sliced cooked bacon, chopped
  • ¼ cup blue cheese crumbles

Instructions

  1. Preheat the oven to 375F.
  2. Peel and halve the beets, then cut into slices.
  3. Place the beets in a baking dish, add olive oil, salt and black pepper, and mix well.
  4. Roast for 30-40 minutes or until the beets are tender.
  5. Add the bacon, stir well, then sprinkle the cheese over the top.
